Minestroni Soup
Minestrone is a thick soup of Italian origin made with vegetables, often with the addition of pasta or rice, sometimes both. Common ingredients include beans, onions, celery, carrots, stock, and tomatoes.

⇉ Ingredients:-
- Butter - 4 tbsp
- Onion chopped - 3/4cup
- Celery - 2tbsp
- Carrot - 1/2 cup
- Shredded cabbage - 1/2 cup
- Sweet Potato - 1
- Tomato Puree - 1tbsp
- Potatoes - 1/2 cup
- Chicken Broth - 250ml
- Garlic - 2 cloves
- Parsley - 2tbsp
- Salt - To taste
- Macaroni - 1/2 cup
- Parmesan Cheese - 1/2 cup
⇉ Method:-
- Melt butter in a heavy bottom pot over a medium heat.Add onion, celery & carrot, saute for few minutes.
- Add cabbage, tomato, tomato puree, potato, chicken broth, garlic, parsley & salt to the pot.
- Bring to a boil , cover and reduce heat simmer foe approximately 1hr until vegetables are barely tender.
- Add pasta and simmer for 30min , check seasoning turnoff the heat.
- Serve hot with grated Cheese.
