Minestroni Soup



Minestrone is a thick soup of Italian origin made with vegetables, often with the addition of pasta or rice, sometimes both. Common ingredients include beans, onions, celery, carrots, stock, and tomatoes.


Ingredients:-


  • Butter - 4 tbsp
  • Onion chopped - 3/4cup
  • Celery - 2tbsp
  • Carrot - 1/2 cup
  • Shredded cabbage - 1/2 cup
  • Sweet Potato - 1
  • Tomato Puree - 1tbsp
  • Potatoes - 1/2 cup
  • Chicken Broth - 250ml
  • Garlic - 2 cloves
  • Parsley - 2tbsp
  • Salt - To taste
  • Macaroni - 1/2 cup
  • Parmesan Cheese - 1/2 cup

Method:-

  1. Melt butter in a heavy bottom pot over a medium heat.Add onion, celery & carrot, saute for few minutes.
  2. Add cabbage, tomato, tomato puree, potato,  chicken broth, garlic, parsley & salt to the pot.
  3. Bring to a boil , cover and reduce heat simmer foe approximately 1hr until vegetables are barely tender.
  4. Add pasta and simmer for 30min , check seasoning turnoff the heat.
  5. Serve hot with grated Cheese.
