PUMPKIN SOUP

 PUMPKIN SOUP

                         Pumpkin soup is a usually 'bound' soup made from a purée of pumpkin. It is made by combining the meat of a blended pumpkin with broth or stock. It can be served hot or cold, and is a popular Thanksgiving dish in the United States.


Ingredients

● Pumpkin - 450gm

● Vegetable stock - 600ml 

● Milk - 300ml 

● Butter - 15gm

● Salt - to taste

● Pepper - a pinch 

● Parsley - a few springs 

● Bread - 115gm

● Fat to fry bread - 15gm


Method

1. Peel pumpkin. Remove seeds and the stringy part, cut into small cubes.

2. Add just enough water to cook. Boil till tender.

3. Press pumpkin through a sieve.

4. Return to pan with the butter, milk and stock.

5. Season. Bring to boil and serve hot, with fried croûtons and garnished with parsley.
