Kashmiri Pulao


Hello Friends...
                             Today we are going to make a Delicious dish which is a KASHMIRI PULAO


  • INGREDIENTS

  • RICE - 250gm
  • PANEER - 100gm
  • SAFFRON - A PINCH 
  • OIL - 2tbsp
  • GINGER GARLIC PASTE - 1tbsp
  • SALT - TO TASTE 
  • CUMIN SEEDS - 1tsp
  • GREEN CARDAMOM - 6
  • RAISINS - 15gm
  • CASHEWNUTS - 20gm
  • FRIED ONIONS & CHOPPED CORIANDER - FOR GARNISH

METHOD 

  1. Wash & soak rice for 30min. 
  2. Cook it by absorption method by adding salt & whole spices . ( use double quantity of water than rice i.e. about 500ml).
  3. Soak saffron in warm water.
  4. Heat oil in kadhai add cumin seeds & green cardamom saute for 30sec. Add ginger garlic paste saute for 1 min then add rice & stir.
  5. Add paneer cubes , raisins & cashew. Sprinkle saffron over rice. Add salt to taste 
  6. Serve HOT  garnished with fried onions & chopped coriander leaves.
