Sweet and Sour Fish is a very popular dish in China, and it's almost always served as a whole fish.
◆ Ingredients
● Fish - 1kg
● Ginger - 10gm
● Garlic - 10gm
● Green chillies - 30gm
● Vinegar - 100ml
● Soya sauce - 100ml
● Sugar - 30gm
● Pepper - a pinch
● Oil - 50ml
◆ Method
1. Clean fish thoroughly, remove fins but leave head and tail. Wash well.
2. Cut gashes diagonally with a knife on both sides from head to tail.
3. Dry fish and fry in hot oil till it is brown on both sides. Remove. Drain off most of the oil leaving a little in the pan.
4. Slice ginger, green chillies and garlic.
5. Fry ginger, garlic and chillies,
6. Add fish, seasoning, soya sauce and sugar and simmer on a gentle fire till fish is cooked and very little gravy remains.
7. Add vinegar, bring to a boil and remove.
