BEEF STROGANOFF - a rich beef gravy

BEEF STROGANOFF

               Beef Stroganoff or beef Stroganov is a Russian dish of sautéed pieces of beef served in a sauce with smetana. From its origins in mid-19th-century Russia, it has become popular around the world, with considerable variation from the original recipe. 


Ingredients

● Fillet of beef - 700gm 

● Onions (small) - 2

● Mushrooms - 115gm 

● Butter - 85gm 

● Tomato purée (optional)  - 1Tbsp

● Sour cream - 300ml 

● Refined flour - 1Tbsp

● Salt - to taste 

● Pepper - a pinch 

● Mustard seeds - a pinch 


Method

1. Cut meat into thin strips about 5 cm long and sprinkle with salt and pepper.

2. Chop onions very fine and fry in hot butter until golden.

3. Wash, peel and slice mushrooms and add to onions.

4. Add meat and fry for 5 minutes.

5. Blend sour cream (reserve a little to add later) with tomato purée, flour and mustard. Mix well.

6. Pour into pan.

7. Stir contents of pan. Cover and simmer gently for about 10 minutes or until meat is tender.

8. Add a little more sour cream just before completion of cooking.
