CHICKEN RISOTTO - a creamy rice dish of Italy

 CHICKEN RISOTTO

                          Risotto is a northern Italian rice dish cooked with broth until it reaches a creamy consistency. The broth can be derived from meat, fish, or vegetables. Many types of risotto contain butter, onion, white wine, and parmesan cheese. It is one of the most common ways of cooking rice in Italy.


Ingredients

● Cooked chicken (diced) - 450gm 

● Onions - 115gm 

● Garlic - 5 Clove 

● Mushrooms - 115gm 

● Chicken stock - 750ml 

● Butter - 30gm 

● Rice - 350gm 

● Tomatoes - 250gm

● Carrots - 115gm 

● Celery - 1 Stalk 

● Lean ham - 30gm 

● White wine - 150ml 


Method

1 Heat butter. Sauté chopped onions, garlic, celery and chopped carrots.

2 After 5 minutes add chopped mushrooms and tomatoes (peeled and cut into small pieces).

3. Allow to cook for a few minutes. 

4. Stir in diced chicken, chopped ham and wine.

5. Increase heat so that dish cooks fast for a couple of minutes.

6. Add seasoning. Stir in stock.

7. Cover pan and allow to cook slowly for 30 minutes.

8. Add rice and cook using more chicken stock if necessary for cooking rice:

9. Finally stir in grated parmesan cheese and a generous amount of butter.
